Oven Roasted Okra

My go-to quick and easy way to serve fresh okra

A lot of people have mixed feelings about okra because of its texture and slime factor, myself included. But this easy way to serve it cuts out that defining characteristic, and makes the vegetable a little more approachable for those who aren't so sure about it. The key is to slice the okra before cooking, and to roast with the sliced side face up. See photos below for a visual guide!

 

Oven Roasted Okra


Ingredients:

  • Fresh okra

  • Olive oil

  • Salt and pepper

  • Other seasonings, to taste

Directions:

  1. Preheat the oven to 400 degrees Fahrenheit.

  2. Wash and pat dry the okra, and cut the tops with stem ends off. Then cut it lengthwise in half.

  3. Place cut okra on a baking sheet, drizzle generously with olive oil, add seasoning, and toss to coat evenly. Spread out the okra in one single layer across the sheet pan, with the cut side facing up.

  4. Roast in preheated oven for 15 minutes, check and toss up a little with a spatula. Return to oven for a few more minutes until completely tender and slightly browned.

  5. Enjoy!

 

Notes:

  • This recipe will taste great with just salt and pepper to season, but you can get creative with other spices! I recommend garlic powder, paprika, or the chili lime seasoning from Trader Joe's as a few ideas.
