Garlic Soy Green Beans

An easy, flavor-packed way to get those daily veggies in.



This week my mom popped into town briefly, and in classic form, brought with her an abundance of homegrown produce and prepared food to stock my kitchen. One of the things currently in full harvest in her garden right now are green beans, so I ended up with two pounds of it use up. This is one of my favorite easy ways to prepare green beans, and they store super well in the fridge (and maybe even taste better the next day, after letting those flavors soak in).


I'm a believer in improvising and guesstimating in the cooking process, which is ironic because I force myself to measure precisely and record my process in order to write these recipes for you all. But for those of you who are like me, this one is definitely one where you can generally wing it on the measurements and process if you're comfortable in the kitchen and particularly with sautéing veggies.

 

Garlic Soy Green Beans

Makes about 4 servings


Ingredients:

  • 1 pound of fresh green beans

  • 1 tablespoon soy sauce

  • 1 tablespoon of honey

  • 3-4 large cloves of garlic

  • 2 tablespoons oil

  • salt and pepper to taste

  • red chili flakes to taste (optional)


Key Supplies: large wok or frying pan with lid, spatula, knife and cutting board


Directions:

  1. Rinse green beans and snap off the ends.

  2. Mince garlic finely (or use a garlic press or microplane).

  3. In a large frying pan or wok, heat about 2 tablespoons of cooking oil on medium-high heat, and throw in the garlic to cook for a minute.

  4. Add in the green beans, and toss to coat in the oil and garlic. Sauté for a few minutes.

  5. Mix together soy sauce and honey, and add to the pan (or if you want to minimize dishes, you can also just drizzle them in separately and stir well to combine). Mix well to coat the beans.

  6. Lower the heat to medium-low, and cover with lid to simmer for about 5-8 minutes, mixing occasionally and checking how well done the beans are.

  7. Uncover, bring the heat back up to medium-high, and add in salt, pepper, and red chili flakes to taste as you finish sautéing at high heat for a few minutes.

  8. Transfer to serving plate and enjoy!

Notes:

  1. Depending on your stove temperature, pan heat distribution, and your preference for how well done you like your green beans, the amount of time for covered simmering can be adjusted.

  2. Use fresh garlic!! The minced stuff in a jar is just not the same. And garlic powder definitely isn't the same. But if you must, those are better than no garlic at all.

  3. You can substitute brown sugar for the honey, or try with oyster sauce if you have that on hand!
